Il Valpolicella Superiore “Capitel Nicalò” è un classico rosso della Valpolicella, espressione tradizionale delle uve autoctone dell’area del veronese e dello splendido territorio collinare di questa storica denominazione veneta. Un vino di media struttura, elegante e aromaticamente intenso, che presenta aromi di frutta rossa matura, frutti di bosco e delicate note speziate. Armonioso ed equilibrato, ha un sorso piacevolmente morbido e fresco, che lo rende particolarmente duttile negli abbinamenti a tavola. Il “Capitel Nicalò” Valpolicella Superiore nasce dalle vigne della tenuta Tedeschi, una realtà storica della Valpolicella, con terreni nelle zone più vocate del territorio: San Pietro in Cariano, Fumane, Sant’Ambrogio, Mezzane di Sotto e Pedemonte. I vigneti sono coltivati su suoli d’antica origine morenica, con terre rosse ricche di calcare e argille e una densità d’impianto di 5500 piante per ettaro. Dopo la vendemmia, i migliori grappoli sono sottoposti a un breve appassimento della durata di circa un mese, che consente alle uve di perdere circa il 10% del loro peso, concentrando gli aromi e gli zuccheri. La fermentazione alcolica si svolge in acciaio con una macerazione sulle bucce di circa due settimane. Il vino riposa per 12/18 mesi in botti di rovere di Slavonia e conclude il periodo d’affinamento con 6 mesi in bottiglia. Il vino “Capitel Nicalò” è un Valpolicella Superiore di particolare intensità e ricchezza aromatica. Il leggero appassimento delle uve e il lungo affinamento in legno, ne fanno un vino con un profilo complesso e profondo. Nel calice si presenta con una veste color rubino. Il bouquet esprime aromi di ciliegia, frutta rossa matura, piccoli frutti di bosco, sfumature di vaniglia e spezie. Al palato ha una buona struttura con tessitura tannica sottile e ben integrata al corpo e conclude con un finale fresco e persistente.
