Il Nizza Olim Bauda è una Barbera d'Asti di particolare pregio, che valorizza la predisposizione di questo tradizionale vitigno piemontese, anche a produrre vini da lungo invecchiamento, capaci di esprimere aromi complessi, ricchi, armoniosi ed evoluti. Il periodo d’affinamento in botte, tende a domare l’esuberante freschezza tipica della barbera giovane, regalando al vino un volto più morbido ed equilibrato, con aromi di ciliegia matura, frutta rossa e piacevoli note speziate. È un’interpretazione particolare di Barbera, che si fa apprezzare a tavola con i ricchi e saporiti piatti tipici della cucina piemontese, in particolare con arrosti di carni rosse. La Barbera Nizza Olim Bauda nasce da un’azienda dell’astigiano che da molte generazioni si dedica alla viticoltura nella zona di Incisa Scapaccino. La tenuta Olim Bauda si estende su una trentina di ettari, tutti coltivati nello splendido territorio collinare di Nizza Monferrato. Si tratta di una delle arre più vocate in assoluto per la Barbera, un vitigno che da sempre fa parte della tradizione popolare piemontese. La sua natura fresca e immediata, ha portato questo antico vino a essere quasi sempre interpretato come un rosso quotidiano e di facile beva. Tuttavia, un accurato lavoro in vigna per contenere le rese, la scelta delle migliori parcelle, hanno permesso di mettere in luce anche il volto più maturo della Barbera, che nobilitata da lunghi affinamenti in legno, dimostra notevoli potenzialità espressive e di possedere la personalità di un grande rosso. Il rosso Nizza Olim Bauda viene prodotto con i migliori grappoli selezionati a mano durante le vendemmia. Al termine della pigiatura, il mosto fermenta sulle bucce in serbatoi d’acciaio inox. La maturazione si svolge in botti di rovere francese per circa 30 mesi a cui segue un ulteriore periodo d’affinamento in bottiglia prima della messa in commercio. Nel calice ha un colore rosso porpora scuro e intenso. Al naso si apre su aromi di ciliegia matura, marasca, frutta rossa, cenni speziati e sfumature di erbe aromatiche. Il sorso è pieno e ricco, con un frutto maturo ed espressivo e una tessitura tannica sottile ed evoluta. Il finale è piacevolmente speziato, lungo e persistente.
