Il Perricone realizzato dalle cantine Fina è un vino rosso di personalità dell’areale di Marsala. Offre al naso una gamma preziosa di spezie, intense e avvolgenti, mentre in bocca si fa largo un sorso elegante, con una base tannica solida e vellutata. Un’etichetta che s’identifica con il territorio da cui ha origine, dai connotati inconfondibili siciliani, che ci trasporta sorso dopo sorso nella campagna marsalese, dove mare e saline si alternano a vigneti condotti con un’agricoltura biologica, attenta a salvaguardare gli splendidi paesaggi che circondano le vigne. Il vino rosso Perricone viene realizzato dalla cantina Fina partendo da diverse parcelle di proprietà sparse nella Sicilia occidentale, zona dove ha proprio origine il Perricone, autoctono a bacca rossa importante per la viticoltura di tutta la regione. Le viti crescono con il sistema della controspalliera con potatura a guyot, a un’altezza sul livello del mare di circa 250 metri. Il mosto, ottenuto dalla pressatura gentile degli acini, fermenta in contenitori d’acciaio a temperatura controllata. Si procede quindi con l’affinamento, che ha una breve durata e si svolge in acciaio, per poi proseguire, dopo l’imbottigliamento, con altri 6 mesi di maturazione in vetro prima della messa in commercio. Il Fina Perricone si annuncia alla vista con un colore rubino intenso, profondo e scuro, a tratti impenetrabile. Il naso si apre su una scala di note speziate interessanti, che pian piano lasciano emergere tocchi di frutta in confettura. All’assaggio è di medio corpo, con un sorso raffinato ampio e fasciante, con una buona trama tannica. Chiude con un finale dotato di ottima persistenza. Una bottiglia perfetta da provare con le carni in umido, ottima anche con una selezione di formaggi stagionati siciliani per dare vita a un abbinamento regionale.
