Queste sono le parole che Allegrini prende in prestito dal grande Ernest Hemingway per descrivere il Valpolicella Classico, taglio di vitigni autoctoni che si presenta con una personalità giovane e un sorso dinamico. Un vino rosso coinvolgente, dai profumi freschi, che esprime i caratteri più tradizionali di una delle denominazioni venete più importanti, che Allegrini, cantina che sotto la guida attenta di Franco e Marilisa è diventata sinonimo di eccellenza del vino italiano nel mondo, presenta con uno stile inconfondibile. Il Valpolicella Classico DOC viene realizzato da Allegrini a partire da un blend tipico del territorio, dove alla Corvina Veronese si aggiunge una buona percentuale di Rondinella e un 5% di Molinara. Le viti, allevate sia a pergola trentina che a guyot semplice, hanno un’età media di circa 33 anni, e crescono su colline caratterizzate da un sottosuolo dove è forte la presenza di argilla e calcare. Le uve, dopo la raccolta, fermentano in acciaio per 9 giorni, a una temperatura ricompresa fra i 25 e i 31 gradi; poi si passa alla fase di affinamento, svolto solo in acciaio fino alla metà di Febbraio. Il Valpolicella Classico prodotto dalla cantina Allegrini si manifesta all’occhio con un colore rosso rubino, attraversato da lievi riflessi tendenti al violaceo. Il naso è fragrante, pervaso da profumi sottili ed eleganti, dove fiori e frutta si alternano a sfumature più speziate. All’assaggio è di corpo leggero, snello, contraddistinto da un sorso beverino, dove i tannini risultano appena accentuati. Un’etichetta molto versatile dal punto di vista gastronomico, che si fa apprezzare a tutto pasto, sia con primi di terra che con secondi a base di carne bianca e rossa.
