Il Valpolicella Classico di Viviani esprime il carattere più giovanile, versatile, schietto e fragrante del territorio: eccezionale connubio tra modernità e aderenza territoriale. L’assaggio è infatti giovane e scorrevole, dal sorso croccante e beverino, frutto dalla lavorazione svolta esclusivamente in acciaio delle uve autoctone. Un’etichetta che si abbina perfettamente alle ricette della cucina mediterranea, a primi piatti, ad affettati, a carni bianche e anche con piatti saporiti a base di pesce. Si tratta del rosso quotidiano per eccellenza: semplice e immediato ma capace di riservare grandi soddisfazioni a tavola, accompagnando la cucina casalinga. Questo Valpolicella Classico Viviani ha origine da un blend di vitigni a bacca rossa autoctoni, dove, accanto a un 70% di Corvina Veronese, troviamo un 30% di Rondinella. Il mosto ottenuto dalla pressatura soffice degli acini fermenta spontaneamente in contenitori d’acciaio grazie all’azione dei lieviti indigeni, nel rispetto delle più autentiche tradizioni contadine. Il vino rimane in acciaio a maturare fino a febbraio, per poi affinare ulteriormente per due mesi direttamente in vetro, dopo l’imbottigliamento. Il Viviani Valpolicella Classico si sviluppa nel calice con un colore tipicamente rubino, attraversato da leggere venature più violacee, evidenti nell’unghia. Il naso è ricolmo di profumi fini e sottili, che si annunciano con eleganti tocchi fruttati e speziati, arricchiti anche da nuance di erbe aromatiche. All’assaggio è di corpo beverino, con un sorso gustoso e appagante, che fa leva su una trama tannica finemente integrata nella struttura generale. Un rosso veneto che, con quest’annata, mette d’accordo la principale critica di settore, non solo italiana: considerando anche il prezzo vantaggioso, non assaggiarlo sarebbe un peccato.
