Lo Champagne Blanc de Blancs Brut di J.H Quenardel è uno Chardonnay in purezza della Montagne de Reims che emerge per il suo carattere raffinato e soave. Sebbene sia originario della non lontanissima Borgogna, lo Chardonnay viene coltivato da secoli nella Champagne per dare origine ad alcuni degli spumanti più importanti in assoluto per quanto concerne l’aspetto qualitativo. Generalmente, le bollicine ottenute da sole uve Chardonnay spiccano per i loro profumi di agrumi e fiori bianchi, nonché per il loro fine carattere minerale. Lo Champagne J.H Quenardel Blanc de Blancs Brut è un 100% Chardonnay da viti coltivate in maniera sostenibile con rese in uva per ettaro limitate, in modo tale da favorire la qualità della produzione. A seguito della vendemmia i grappoli vengono vinificati in bianco tramite pressatura delicata e successiva fermentazione alcolica del mosto in vasche di acciaio inox. La presa di spuma avviene invece in bottiglia secondo il Metodo Champenoise, con l’affinamento sui lieviti in vetro che si protrae per 60 mesi fino al definitivo degorgement e dosage a Brut, a 6.9 g/l di zuccheri residui. Nello specifico, la liqueur d’expedition viene elaborata a partire da una riserva perpetua di Chardonnay. All’esame visivo lo Champagne Brut J.H Quenardel Blanc de Blancs mostra una colorazione giallo paglierino dai delicati riflessi verdolini con perlage fine e persistente. Al naso sentori di agrumi, fior di mandorlo e spezie dolci si alternano a note di crema pasticcera, con sensazioni tostate che emergono sul finale. Profondo, complesso e cremoso lo sviluppo gustativo, caratterizzato da grande tensione e da una chiusura matura, non priva però di una fresca mineralità. Sebbene risulti già gustosissimo in gioventù, questo Champagne è altresì capace di evolvere parecchi anni in bottiglia se correttamente conservato.
