Il “Rossomatò” di Valter Mattoni è un’etichetta che nasce a Castorano, in provincia di Ascoli Piceno. È un rosso di grande personalità, realizzato con uve di Grenache in purezza, uno dei vitigni più coltivati al mondo, diffuso soprattutto nel sud della Francia e in Spagna. Nelle Marche ha trovato un ambiente ideale per esprimersi su eccellenti livelli qualitativi. La vinificazione semplice e il lungo affinamento in legno, regalano un rosso intenso, morbido e complesso, che conquista per il suo profilo schietto e genuino. Il vino “Rossomatò” di Valter Mattoni è il frutto del desiderio di sperimentare di uno tra i più innovativi e talentuosi vigneron marchigiani. La sua piccola tenuta si trova a un’altitudine di 300 metri sul livello del mare, nella splendida zona collinare del primo entroterra della costa adriatica. Il clima mite e soleggiato, accarezzato dalle dolci brezze del mare, è perfetto per portare a maturazione uve di eccellente qualità. I vigneti di Grenache sono coltivati su terreni sciolti, di matrice sabbiosa e ricchi di scheletro, che donano al vino una particolare finezza ed eleganza espressiva. Al termine della vendemmia, la selezione dei migliori grappoli viene avviata alla vinificazione, che si svolge con fermentazione in vasche d’acciaio inox e utilizzo di soli lieviti indigeni. Il vino matura per un periodo di 24 mesi in barrique e completa l’affinamento con alcuni mesi in bottiglia prima della messa in commercio. Il “Rossomatò” della cantina di Valter Mattoni è un vino di grande ricchezza aromatica, che esprime con pienezza e maturità le migliori caratteristiche varietali del famoso vitigno Grenache. Nel calice si presenta di colore rosso rubino brillante, con leggere sfumature porpora. Il profilo olfattivo è ricco e intenso, con aromi fragranti, che ricordano il mirtillo, il ribes nero, la mora selvatica, il lampone, la marasca, le morbide sensazioni di spezie orientali, le sfumature di tabacco biondo, cuoio e legni nobili. Al palato è di media struttura, con una tessitura tannica matura ed evoluta, aromi fruttati, fragranti e ampi, che si distendono armoniosi in un sorso avvolgente e molto persistente.
