Il Barolo ‘Prapò’ della rinomata cantina langarola Ettore Germano costituisce un’espressione profonda e strutturata, autentica interpretazione del territorio di Serralunga d’Alba. La Menzione Geografica Aggiunta ‘Prapò’ si trova sulla parte alta del versante orientale del territorio di Serralunga e originariamente faceva parte del Bricco Cerretta, da cui è stata differenziata nel 2009. La tenuta Ettore Germano dispone di circa un ettaro e mezzo in questo cru, rappresentato da vigneti impiantati nel 1967, nel 1999 e nel 2012. Ettore Germano Barolo ‘Prapò’ è un Nebbiolo in purezza da viti di 45 anni di età media, impiantate su terreni argilloso-calcarei caratterizzati dalla presenza di strati sabbiosi. I filari, esposti a sud-est, sono situati tra i 330 e i 370 metri di altitudine. I grappoli vengono raccolti a mano in cassette e quindi sottoposti a diraspatura e pigiatura, con la successiva fermentazione alcolica che si realizza in serbatoi verticali di acciaio inox, accompagnata da 40-45 giorni di macerazione sulle bucce. Dopo la svinatura e la fermentazione malolattica, il vino è travasato in botti grandi di rovere da 20 e 25 ettolitri per l’invecchiamento di 18-24 mesi, al termine dei quali si procede con l’imbottigliamento e l’ulteriore riposo di un anno in vetro. Il Barolo ‘Prapò’ di Ettore Germano è di colore rosso rubino brillante dall’orlo granato. Il corredo aromatico è descritto da sentori complessi e piacevoli di fragolina, ciliegia, rosa, liquirizia, alloro, menta e cioccolato amaro, impreziositi da richiami di china e cuoio. La struttura e l’intensità al palato sono ben bilanciate da viva freschezza e tannini maturi, in una persistente progressione di assoluta eleganza e classe. Si tratta di un Barolo dotato di una straordinaria capacità evolutiva, che può essere tranquillamente dimenticato in cantina per decenni.
