Lo Champagne Blanc de Blancs Brut “Cuvée S” Salon è un’etichetta leggendaria per tutti gli amanti dei grandi Champagne. Salon rappresenta l’eccellenza assoluta di una Maison che ha saputo conservare una cura artigianale, basata su un rigoroso savoir-faire senza compromessi. È la rappresentazione della ricerca di purezza ed essenzialità: un solo vitigno, lo Chardonnay, un solo terroir, la Côte des Blancs, un solo Grand Cru di Mesnil-sur-Oger e una sola annata. Scelte semplici, tenute ferme nel corso degli anni, che hanno contribuito a costruire la fama mondiale di una delle Maison più ricercate e raffinate. La “Cuvée S” è uno Champagne Blanc de Blancs Brut creato da una Maison che dal 1905 produce millesimati di alta gamma, in principio solo per piacere e consumo personale e solo dal 1920 commercializzati tra gli intenditori e i collezionisti più attenti. Oggi Salon fa parte del gruppo Delamotte, ma ha conservato intatta la sua identità e la sua vocazione all’eccellenza. Le uve di Chardonnay provengono da una parcella di un ettaro “le Jardin Salon” e da altre 19 piccole vigne coltivate sul territorio del Grand Cru di Mesnil-sur-Oger, situate nella zona più prestigiosa sopra la chiesa del piccolo borgo. Le uve sono selezionate accuratamente prima d’essere avviate alla pressatura soffice. Il mosto fiore viene avviato alla vinificazione in bianco e i vins clairs, dopo un periodo di affinamento di qualche mese, sono assemblati per creare la cuvée finale del millesimo. La seconda fermentazione si svolge in bottiglia secondo il Metodo Champenoise, con un periodo di sosta sui lieviti di 11 anni. Champagne Blanc de Blancs Brut della Maison Salon “Cuvée S” è una bottiglia riservata a grandi occasioni e da degustare in abbinamento con del Jamon Iberco Patanegra, con un risotto al tartufo bianco o con un carpaccio di tonno. Nel calice si presenta di colore giallo chiaro con riflessi brillanti, attraversato da un perlage finissimo e luminoso, che sale sottile, discreto e continuo. Il bouquet è caratterizzato da raffinati profumi floreali, note di scorza di lime, pain brioche, sfumature tostate, aromi di frutta secca, frutta a polpa gialla e albicocca disidratata. Al palato regala aromi complessi e intensi, ricchi e armoniosi, con un sorso sostenuto da una vibrante tensione, che sfocia in un finale lungo, sapido e di grande freschezza.
