Lo Champagne Brut Reserve Blanc de Blancs Grand Cru del Récoltant Manipulant De Sousa è uno spumante artigianale abile nel riflettere in maniera autentica l’animo raffinato della Côte des Blancs. Quest’etichetta rappresenta il biglietto da visita della cantina in quanto ne ricalca lo stile armonioso ed è realizzata unicamente con Chardonnay, vitigno principe di De Sousa. Le uve destinate allo Champagne Brut Reserve Blanc de Blancs, cresciute attraverso un approccio agronomico sinceramente sostenibile, provengono da vecchie vigne situate nei villaggi Grand Cru di Avize, Cramant, Oger e Le Mesnil. De Sousa Champagne Blanc de Blancs Brut Reserve Grand Cru deriva da sole uve Chardonnay raccolte da pregiati vigneti Grand Cru della Côte des Blancs. Le piante, condotte a regime biologico e biodinamico certificati, hanno oltre 40 anni di età e sono radicate su terreni ricchi di calcare e gesso. La vinificazione dei grappoli d’annata si realizza in vasche di acciaio inox mentre nella creazione della cuvée viene aggiunta una percentuale di vin de reserve vinificati in barrique. Una volta pronta, la base spumante viene imbottigliata con la liqueur de tirage per la seconda fermentazione in accordo al Metodo Champenoise, con 20-36 mesi di affinamento sui lieviti in vetro. Concluso il periodo sur lie si procede con il degorgement e il conseguente dosaggio Brut. Il Blanc de Blancs Champagne Brut Reserve Grand Cru del vigneron De Sousa ha una tonalità giallo paglierino dalle sfumature oro-verde, con perlage sottile e persistente. Richiami di frutta gialla matura, agrumi e fiori caratterizzano l’olfatto, arricchiti da note minerali e complessi cenni di caffè e nocciola tostata. Gusto molto fresco e minerale, non privo di morbidezza ed equilibrio, con un’avvolgente effervescenza che accompagna le evolute sensazioni finali di frutta candita.
